Roasted Vegetables

INGREDIENTS

asparagus spears

tbsp (30 ml)
dried Italian herbs

tbsp (20 ml)
minced garlic
16
new potatoes

tbsp (20 ml)
olive oil
1
pn
salt and pepper to taste
2
tsp (10 ml)
toasted sesame oil

DIRECTIONS

  1. Preheat oven to 400 F (200 C).
  2. In a roasting pan, combine potatoes, oil, garlic, and herbs and toss well until potatoes are well-coated. Season with salt and pepper.
  3. Place in oven and roast for 20 minutes or until potatoes are just tender when tested with a fork.
  4. In a mixing bowl, toss asparagus in sesame oil until coated.
  5. Add asparagus to roasting pan with potatoes and cook for 5 minutes.
