Roasted Spiced Nuts

INGREDIENTS

cold water

pepper, freshly ground

tsp (10 ml)
orange zest, grated

lb (450 g)
mixed shelled whole nuts (almonds, cashews, walnuts, pecans, hazelnuts)

large egg white
1
tsp (10 ml)
ground cinnamon

tsp (0 ml)
fine sea salt
1/4
tsp (0 ml)
each ground nutmeg, ground ginger and ground allspice
1/2
tsp (0 ml)
each ground cardamom and ground cloves

tsp (10 ml)
curry powder, optional
3/4
cup (190 ml)
sugar

DIRECTIONS

  1. Preheat the oven to 275 F (140 C).
  2. Line a rimmed baking sheet with foil and lightly grease the foil with butter or oil.
  3. In a small bowl combine sugar, orange zest, spices, salt and pepper.
  4. In a medium bowl, whisk the egg white and cold water until frothy.
  5. Add the nuts and stir to coat.
  6. Coat nuts with spice mixture and spread in a single layer onto the baking sheet.
  7. Bake 45 minutes or until coating is crisp and golden.
  8. Remove from oven and let cool. Store in an airtight container for up to 3 weeks.
