Ribs with Tequila Barbecue Sauce

INGREDIENTS

cup (250 ml)
brown sugar

tbsp (30 ml)
soy sauce

salt and freshly ground pepper

lb (1800 g)
pork spareribs

cup (60 ml)
orange juice, freshly squeezed

limes - zest, finely grated and freshly squeezed

cup (130 ml)
ketchup

garlic, minced

tsp (10 ml)
chili garlic sauce

cup (190 ml)
tequila
DIRECTIONS
- Preheat oven to 375 F (190 C). Rinse ribs and pat dry. Cut into portions of 4 ribs each and season with salt and pepper.
- Arrange in a single layer in shallow roasting pan. Cover withfoil and bake for 1 and 1/2 hours.
- Meanwhile, combine all remaining ingredients and stir well.
- When ribs have baked for 1 and 1/2 hours, remove roasting pan from oven. Using tongs, dip ribs into barbecue sauce to evenly coat and return to roasting pan.
- Bake uncovered, basting with sauce for 30 minutes or until ribs are tender. Serve immediately.
