Quick Citrus Hollandaise (for Citrus Crab Cake Benedict)

cup (60 ml)
butter

tsp (10 ml)
fresh lemon juice

tbsp (30 ml)
fresh lime juice

large egg yolks

tbsp (30 ml)
orange juice, freshly squeezed

Tabasco sauce
DIRECTIONS
- Place butter, citrus juices and salt into a microwave-safe bowl. Microwave on high until butter melts. Whisk to mix and to cool slightly. Add egg yoylks and whisk until well blended.
- Cover with plastic wrap and microwave on medium (50%) for 15 seconds.
- Whisk until well blended. Repeat twice until sauce has thickened. Whisk in Tabasco sauce.
