INGREDIENTS

Bay leaf

Chicken stock, plus up to 1 extra quart (I L)

lb (1350 g)
Oxtail, thicker pieces preferred

DIRECTIONS

  1. Place oxtail in a large pot with 3 quarts (3 L) chicken stock, bay leaf, salt and pepper.
  2. Bring to a boild, reduce heat to low, simmer for 5 hours until meat is falling from the bone.
  3. Skim off the foam.
