Chicken stock, plus up to 1 extra quart (I L)

Oxtail, thicker pieces preferred
DIRECTIONS
- Place oxtail in a large pot with 3 quarts (3 L) chicken stock, bay leaf, salt and pepper.
- Bring to a boild, reduce heat to low, simmer for 5 hours until meat is falling from the bone.
- Skim off the foam.
