Moscato Poached Pears with Bittersweet Chocolate Dust

Bartlett pears

bittersweet chocolate shavings, for garnish

Moscato d’Asti wine

piece fresh ginger root, about 1 inch (2.5 cm) square, chopped

small, red, semi-frozen grapes, for garnish

DIRECTIONS
- In a saucepan, combine water, sugar, Moscato d’Asti, ginger and cloves to make syrup.
- Peel and core pears and place in warmed syrup.
- Poach pears in syrup until al dente, approximately 10 minutes at simmer. Remove pears and allow to cool.
- Reduce syrup by approximately half, strain.
- Thinly slice pears and fan out on serving plates. Cover with syrup.
- Serve with chocolate shavings and grapes.
