Moscato Poached Pears with Bittersweet Chocolate Dust

INGREDIENTS

Bartlett pears

bittersweet chocolate shavings, for garnish
2
cloves
1
cup (250 ml)
Moscato d’Asti wine
1
piece fresh ginger root, about 1 inch (2.5 cm) square, chopped
1
bn
small, red, semi-frozen grapes, for garnish

cup (500 ml)
sugar

cup (1750 ml)
water

DIRECTIONS

  1. In a saucepan, combine water, sugar, Moscato d’Asti, ginger and cloves to make syrup.
  2. Peel and core pears and place in warmed syrup.
  3. Poach pears in syrup until al dente, approximately 10 minutes at simmer. Remove pears and allow to cool.
  4. Reduce syrup by approximately half, strain.
  5. Thinly slice pears and fan out on serving plates. Cover with syrup.
  6. Serve with chocolate shavings and grapes.
