Cumberland Sauce

INGREDIENTS

tbsp (20 ml)
Cornstarch
1/2
cup (130 ml)
Port
1
tbsp (20 ml)
Orange rind, coarsely grated
1
cup (250 ml)
Orange juice
1/2
cup (130 ml)
Onion, chopped
1
tbsp (20 ml)
Lemon rind, coarsely grated
1/2
cup (130 ml)
Lemon juice
1
Few drops of Tabasco
1
tsp (10 ml)
Dry mustard
1
cup (250 ml)
Redcurrant jelly

DIRECTIONS

  1. Combine the port, orange and lemon juices, jelly, onion, mustard and Tabasco in a saucepan.
  2. Bring to a boil, stiring occasionally.
  3. Strain the sauce.
  4. Combine cornstarch with a little of the hot sauce in a cup and mix together well.
  5. Stir this mixture back into the rest of the sauce and cook over low heat, stirring constantly, until slightly thickened - do not boil.
  6. Add orange and lemon rind.
  7. Serve with goose.
