Cumberland Sauce

Orange rind, coarsely grated

Orange juice

Onion, chopped

Lemon rind, coarsely grated

Lemon juice

Few drops of Tabasco

tsp (10 ml)
Dry mustard

cup (250 ml)
Redcurrant jelly
DIRECTIONS
- Combine the port, orange and lemon juices, jelly, onion, mustard and Tabasco in a saucepan.
- Bring to a boil, stiring occasionally.
- Strain the sauce.
- Combine cornstarch with a little of the hot sauce in a cup and mix together well.
- Stir this mixture back into the rest of the sauce and cook over low heat, stirring constantly, until slightly thickened - do not boil.
- Add orange and lemon rind.
- Serve with goose.
