BC Oysters Rockefeller

Recipe for 30 BC farmed oysters.

INGREDIENTS

BC farmed oysters

sprigs parsley, minced

small onion, minced

salt

cup (250 ml)
raw spinach, minced
1/2
cup (130 ml)
grated parmesan cheese
1/2
cup (130 ml)
cracker crumbs
1/2
tsp (0 ml)
celery salt
1/8
tsp (0 ml)
cayenne
1/2
lb (230 g)
butter
1/2
cup (130 ml)
bread crumbs
1
tsp (10 ml)
Worcestershire

DIRECTIONS

  1. Combine spinach, onion, parsley, Worcestershire, salt and cayenne in a large bowl.
  2. Melt butter in saucepan over low heat, remove and add cracker crumbs. Mix and add to seasonings in bowl.
  3. Spoon over oysters, sprinkle with Parmesan and bread crumbs.
  4. Bake at 400 F (200 C) for 10 minutes.
  5. Garnish with lemon.
